Panela sugar, also known as Rapadura Sugar, is derived from the raw sugar cane and is different from regular sugar due to its manufacturing process: no chemicals are used and refining is only the removal of physical impurities. Also, the molasses are not separated.

The cane juice is filtered, clarified, and the water is evaporated at low temperatures. The juice is left to dry at the same time as crystalizing. As a result, we obtain a dark coloured mass. This is panela sugar and can be consumed as it is or it can go through a grinding process (granulation) to obtain the rapadura form.
