The distinction between commercial cocoa powder and cacao paste lies at the heart of the difference between typical hot chocolate and a ceremonial cacao beverage. Commercial cocoa powder is processed and often stripped of much of its natural fat, leading to a lighter, less intense flavor. It's usually paired with sugars, milk solids and artificial flavors, resulting in a sweet drink that is far removed from the cacao bean's raw essence.
On the other hand, cacao paste is made from whole, ground cacao beans, retaining all the natural fats, minerals and rich, complex flavors. This form of cacao offers a more robust, earthy taste, with a natural bitterness that is balanced by natural sweeteners and optional spices, creating a beverage that honours the depth of cacao.
Below is a simple step by step recipe for a delicious hot cacao beverage.
Ingredients:
- 30 grams ceremonial organic cacao paste
- 2 cups (475 ml) water (or your preferred milk, like almond, oat or whole milk)
- 1-2 tablespoons organic agave syrup (dark or light) or coconut sugar (adjust to taste)
- A pinch of sea salt (optional)
- A dash of ground cinnamon, nutmeg, or chili powder (optional, for added warmth and spice)
Instructions:

Heat the Liquid: In a small saucepan, heat the water or milk over medium heat until it's hot but not boiling.

Melt the Cacao Paste: Break the cacao paste into small chunks and add them to the hot liquid. Stir continuously until the cacao paste is fully melted and blended into the liquid. This may take a few minutes.

Sweeten: Add your choice of organic agave syrup or coconut sugar. Stir well to dissolve the sweetener completely. Taste and adjust the sweetness if needed.
